In the five-grain liquor making process, sorghum contains tannins, which produce aromatic substances such as syringic acid and syringaldehyde after fermentation, which increase the flavor of the liquor. Corn increases the sweetness of the liquor, and rice increases the purity of the liquor. Each of them has its own uses.

The final result of the discussion was that starting from the crushing of the raw materials, each type of grain should be processed separately, and controlled according to the particle size of the grain. For sorghum, the tannin should be reduced and the bitterness should be reduced; the corn germ with a higher oil content should be degermed before reuse to prevent the appearance of foreign flavors; and when soaking and steaming rice, attention should be paid to adding appropriate amount of water to ensure complete fermentation.
